Today I learned a dish called Rice-Serving Chinese Cabbage, and now I will record the steps as follows
Ingredients & Seasonings#
- Chinese cabbage
- Red chili
- Garlic cloves
- Spring onion/Green chili
- One spoon: light soy sauce, dark soy sauce, starch, oyster sauce.
- Half spoon: salt, sugar.
- A little: pepper powder.
- A small bowl, about 200~300ml in size.
- Sichuan peppercorn, star anise, etc., choose as desired.
Steps#
- Wash and chop the ingredients, put them in a prepared bowl;
- Add the seasonings in the above proportions to a small bowl, mix with half a bowl of water;
- Heat up, add a suitable amount of cooking oil;
- After the oil is hot, add red chili, garlic cloves for flavoring; (Sichuan peppercorn, star anise can also be added at this time, choose as desired)
- Add Chinese cabbage, stir-fry until soft;
- Add the seasoning sauce, then add spring onion/green chili after 2 minutes, and remove from heat after another 2 minutes.
Notes#
The issue encountered in the first attempt was: unclear control of the heat, will adjust and record in the next practice.
